Great Lamb Starts With Honest Provenance
At Jarabin, we believe in being completely transparent about where your food comes from. Our lamb is produced in partnership with Dean Bourlet of Kambah Poll Merino Stud — a fellow NSW Southern Tablelands farmer whose breeding philosophy, animal welfare standards, and commitment to pasture-raised production align exactly with our own.
We don't raise our own lamb — and we're proud to say so. Instead, we've partnered with the best. Dean's Kambah Polled Merino genetics are among the highest-indexing in Australia, selected specifically for growth rate, eating quality, and temperament. His animals graze on the same style of open pastures that border the Murrumbidgee River — no feedlots, no grain finishing, no shortcuts.
When you buy Jarabin lamb, you know exactly which stud bred it, which farmer raised it, and how it lived. That level of traceability is almost unheard of in Australian lamb retail.
Our Lamb Partner
Dean Bourlet — Kambah Poll Merino Stud
Dean has been passionate about Merinos and the land his entire life — shearer, farmer, livestock marketer, and now stud owner. Based near Jugiong in the NSW Southern Tablelands, Dean and his partner Mandy took over Kambah Poll Merino Stud in 2022, building on a legacy of high-indexing, mules-free genetics that has been refined since 2000. His rams are fine-micron, high-performing, and selected with the same obsessive attention to detail that we apply to our Black Angus breeding programme.
BREED
Black Angus Renowned for natural marbling, tenderness, and flavour. Our bulls come from Australia's top registered Angus studs, selected for eating quality traits.
WELFARE
Low-Stress Husbandry Happy cattle produce better beef. We use low-stress stockmanship, rotational grazing, and never administer growth hormones or routine antibiotics.
NUTRITION
Grass Fed & Finished No grain. No feedlot. Our cattle graze on native and improved pastures year-round, converting sunlight and soil into nutrient-dense, flavourful beef.
LAND
Regenerative Farming Managed grazing that builds soil carbon, improves pasture diversity, and enhances the health of our Murrumbidgee River corridor ecosystem.
Grass Fed vs Grain Fed: Why It Matters
Most supermarket beef — even beef labelled "Angus" — is grain-finished in feedlots for the final 60–100+ days of life. At Jarabin, we never do this. Here's why the difference reaches your plate:
Higher Omega-3 Fatty Acids
100% grass-fed beef contains significantly more omega-3s than grain-finished beef, thanks to the diverse botanical diet our cattle consume across four seasons of pasture.
Cleaner, More Complex Flavour
Pasture-raised beef develops flavour slowly over a longer, natural growth period. The result is a depth of taste that reflects the land — what French winemakers call terroir.
Better CLA Profile
Conjugated Linoleic Acid (CLA) — a naturally occurring fatty acid found at higher concentrations in grass-fed ruminants — is linked to a range of health benefits.

Frequently Asked Questions
Questions we hear at the farmers market and from our online customers — answered honestly, from the farm.
-
It means our cattle eat only grass and pasture from birth to processing — no grain, no silage, no supplements. Many beef products labelled "grass fed" are actually grain-finished in their final weeks. At Jarabin, our animals are grass-fed and grass-finished. That distinction matters for both flavour and nutrition.
-
We raise Black Angus cattle, sourced from leading Australian Angus studs and from our own on-farm genetic lines. Angus is internationally recognised for superior marbling, tenderness, and eating quality — and it thrives on Australia's Southern Tablelands pastures.
-
Yes. We do not use Hormone Growth Promotants (HGPs) and we do not administer routine antibiotics. Healthy, low-stress cattle on good pasture simply don't need them.
-
Our farm is located at Bookham, in the NSW Southern Tablelands — approximately 90 minutes from Canberra. We sell online and deliver across Australia via cold-chain courier, and we attend Farmers Markets in Sydney and Canberra each week.
